I had that problem too. I assume you are using latest build? If so then your FOV has changed lower it a bit (I took it down to 75) The fist is now visible but annoying (too much swinging back and forth) and it is a little on the low side. There are commands to raise it more and reduce the swing but I don't remember what they are.
on my comp, the fov is was set at 95 by default, this resulted in a little bit of a fish eye and looking around was not natural. In other words, looking left, right, up, down resulted in the scene moving what seemed to be twice what it would be with normal vision,. dropping to 75 seemed to fix this.

Sorry, My monitor is 1600x900, so that's what I'm running at. Saying that looking around was twice what it should be was a bit of an exaggeration on my part but it was more than it should have been. 80 fov looks to be about right but the fist was still not showing so I went with 75. This last build was the first to let me change fov and only when I installed to my C drive. When I had it on my E drive, it would not accept changes and crashed or would not exit without a ctrl alt dlt. It is fine now so far as I can tell.
I did not post my problems earlier because my windows 8 is not a normal win8. I am using a shell program to make it look and act more like windows7 or Vista and I thought that may be the cause.

I am using Win7 64 bit, an Nvidia GPU and build 1006.
Changing the weapon offset is a far better alternative to shortening the FOV.

It is not currently clear whether the issue you describe is in fact the same as TonyH's.
